4th of July Cheesecake Bars
This is going to be your favorite treat this summer! Not only are these cheesecake bars absolutely delicious, but they are gorgeous, too. The filling has the perfect amount of cream cheese flavor and isn’t overly sweet. It stays nice and luscious after baking, too!
The red, white, and blue swirls stay vibrant even after baking. It’s a simple cheesecake recipe that anyone can whip up, even if you aren’t much of a baker. I promise that if you make these for a cookout, everyone is going to be asking you for the recipe.

Recipe Ingredients
Below, you will find everything you need to make the crust and filling from scratch for these red white and blue cheesecake bars. Many affordable staples and other inexpensive ingredients are needed to make this a successful dessert.
For the crust
- Oreo crumbs: Any variety of crushed Oreos or chocolate sandwich cookies will work perfectly. I like to use a food processor for speed, but you can also put the cookies in a reusable bag and crush them with a rolling pin.
- Sugar: I like adding a little sugar to sweeten up the cheesecake crust. I just use white granulated sugar.
- Butter: Be sure to melt the butter right before you make the crust so it doesn’t cool down too quickly. I also prefer unsalted butter for this to avoid a salty flavor.

- Sour cream: I use full-fat sour cream, but reduced-fat is fine as well. Greek yogurt is a great substitution if you don’t have sour cream.

- Vanilla: Adding a touch of vanilla flavor just makes these cheesecake bars even better. I prefer pure vanilla extract when possible.
- Eggs: If you want structure in your custard, that’s where the eggs come in. They help to hold everything together.

- Whipped topping: I like to add a dollop of whipped topping to each cooled cheesecake bar for texture and presentation.

How to Make Red White and Blue Cheesecake Bars
Below are all of the steps you’ll need to make these scrumptious 4th of July cheesecake bars. Before you get started, gather and measure all of the ingredients. This will make the process go much smoother!
- Prepare the oven and baking dish. Preheat the oven to 350 degrees F and grease a 9×13 baking dish with non-stick spray.
- Prepare the cookie crust. Combine the cookie crumbs, sugar, and melted butter in a medium mixing bowl. Mix thoroughly until all of the cookies are coated in butter. Transfer the mixture to the baking dish and press it down firmly in an even layer.
- Bake it. Place the crust in the oven and bake it for 10 minutes. Allow it to cool while you prepare the filling.
- Tip: Turn the oven heat down to 325 degrees F before you bake the cheesecake.

- Beat the cream cheese. Add the cream cheese to a large bowl and beat using an electric mixer until smooth.
- Add sour cream, sugar, and vanilla. First, add the sour cream and mix well. Then, add the sugar and vanilla and combine until smooth.
- Gradually add eggs. Add each egg one at a time until the batter is completely mixed together.
- Separate and color the batter. Equally divide the batter into three smaller bowls. Color one bowl red and one blue, and leave the third uncolored.

- Transfer the filling to the crust. Spoon the batter into the crust by alternating colors. Use a knife to swirl the colors gently.
- Bake. Place the cheesecake into the oven and bake it for about 35-40 minutes. It’s ready when the filling is set, but the center is still just a little jiggly.
- Cool. Remove it from the oven and let it cool completely.
- Chill. Then, transfer them to the refrigerator to chill for a minimum of 4 hours or overnight.
- Garnish and serve. Top the red white and blue cheesecake bars with Cool Whip and sprinkles before enjoying!

Tips for Success
- Cool completely before chilling. To prevent cracking, make sure the cheesecake cools to room temperature before you place it in the refrigerator.
- Make them for a different occasion. Use orange and purple food coloring for Halloween or pastel green, pink, and blue for Easter!
- Make them ahead. Allow them to chill in the refrigerator overnight, and serve them the next day!
Proper Storage
Leftover cheesecake bars can be stored in an airtight container in the refrigerator for up to 3 days or in a freezer-safe container for up to 2 months. Thaw them in the refrigerator overnight before eating them.

Red White and Blue Cheesecake Bars
These Red White and Blue Cheesecake Bars are perfect for all those upcoming summer parties. Oreo crust topped with a silky cheesecake filling is a luscious, cool and creamy summer dessert. Topped with whipped cream and festive sprinkles this is always a hit at the summer cookouts.

Ingredients
- 2 ½ cups chocolate Oreo crumbs
- 1/4 cup sugar
- 10 tablespoons unsalted butter melted
Filling
- 32 ounces cream cheese softened
- 1 cup sour cream
- 1 cup sugar
- 2 teaspoon vanilla extract
- 4 large eggs
- Red and blue food coloring
- Whipped topping and sprinkles for garnish
Instructions
Preheat the oven to 350 degrees.
Grease a 9×13 baking dish.
To a mixing bowl combine the cookie crumbs, ¼ cup sugar and melted butter.
Press the cookie crust mixture into the prepared pan and press it down into an even layer.
Bake for 10 minutes. Remove from the oven and set aside to cool slightly while you prepare the filling.
Reduce the oven temperature to 325 degrees.
In a large bowl using an electric mixer beat the cream cheese until smooth.
Add the sour cream and mix until combined.
Mix in the sugar and vanilla extract.
Slowly add the eggs to the mixture until everything is thoroughly mixed together.
Separate the batter into 3 bowls and dye one bowl red and the other bowl blue.
Spoon the batter onto the crust in alternating colors.
Using a knife lightly swirl the colors around.
Bake for 35 to 40 minutes or until the filling is set and the center is just slightly jiggly.
Remove from the oven and cool completely
Place in the fridge to chill for at least 4 hours.
Slice, top with whipped cream and sprinkles and serve!
